Crock Pot Crazy!

I confess, most of my attempts at delicious meals come from the prepared foods section of the grocery store.  I always find recipes and buy the ingredients, but after a long day at work, I just want to eat, no fuss no muss.  Which is why I'm now obsessed with my slow cooker.  With most of these recipes, you just put all the ingredients into the crock pot, and then it cooks by itself.  And then I can eat as soon as I get home!

This winner of a recipe comes from the queen of quick meals, Rachel Ray.

Pulled BBQ Beef Sandwiches
Ingredients:
1 Large Onion
3/4 Cup Ketchup
1/3 Cup Cider Vinegar
2 Tbsp. Dark Brown Sugar
1 Tbsp. Paprika
2 lbs boneless beef chuck roast, cut into two pieces
2 Cloves Garlic, halved

Directions:
1. Combine onion, ketchup, vinegar, brown sugar and paprika in the slow cooker.
2. Cut slits all over the roast and rub the meat with the cut sides of the garlic.  Tuck the remaining pieces of garlic into the slits and then season with salt and pepper.  Put the meat in the slow cooker and coat with the ketchup sauce.
3.  Put the lid on, and cook on low heat for 7 to 8 hours.
4. Serve on hamburger buns and coleslaw for a great dinner!
